In General:
In this course, you will need to remember previous courses you have taken (e.g. HR & Customer Service, Consumer Behaviour) and apply/consider/note some of the outcomes learned previously.
Background:
As an introduction to Revenue Management, you are to consider how a restaurant/pub would make a decision on what to serve to a Toronto clientele. There are 12 taps in the establishment and you have carte blanche (free reign) to decide which products you will offer your customers.
Scenario:
Going into summer season, an upscale urban pub/eatery is adding a draught system. The current menu is a mix of modern pub fare. The following are the conditions that must be met by your brand decisions. Following these conditions, but make sure you explain using your knowledge of Revenue Management to this point why you are choosing the product in question.
Conditions:
1. 12 taps available for draught
2. Four taps from a Major Brewery, Four taps Domestic Microbrewery, Four taps Import. (RM explanation suggested).
3. Present a range of pricing levels, including a potential offering for promotional pricing. (RM explanation required).
4. Must range from lighter to darker, and include more flavourful offerings. (Consumer Behaviour explanation suggested).
5. Must represent a clear variety of brewing styles. (HR training challenge explanation suggested).
6. Brewing styles should range from traditional to alternative/modern styles. (Consumer Behaviour explanation suggested).
7. It is usually financially beneficial to show allegiance to big brands for both vendor relationship reasons, and to promote cross selling opportunities of a brand that a customer enjoys.
8. Up to 4 (four) beers may be identified as summer specific choices, and winter alternative may be suggested for the fall menu review. (RM planning explanation suggested).
Every offering will need a Product fact sheet (usually downloadable from company websites- put in the Appendix) and should include the following
• Reason for its inclusion
• Facts about the beer
• Food pairings
Revenue management considerations include:
• Cost and price strategy
• Server Selling Strategies
The project should include:
1. Cover page
2. An introduction
3. Background on the relevance of the exercise.
4. An overall discussion of all the choices.
5. The RM strategies that are being represented.
6. Additional strategies from past learning outlined.
7. A conclusion
8. An Appendix of your products.
9. Option: Consider a table to visually outline your offerings.

You can be successful with a straight forward completion of this assignment and be confident that with clear explanations and good choices that you will MEET expectations.
However, in order to EXCEED expectations, you should look ahead/research beyond the first 2 modules for the best marks in this assignment.
